Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mash 2 ripe bananas in a large mixing bowl. Add 1/3 cup of almond milk and 1/4 cup of maple syrup. Mix until well combined.
  3. In a separate bowl, combine 2 cups of oats, 2 tablespoons of flaxseed, 2 tablespoons of chia seeds, and a pinch of salt. Stir until evenly distributed.
  4. Pour the dry mixture into the wet ingredients and stir gently until combined.
  5. Fold in 1 cup of cranberries and 1/3 cup of pumpkin seeds into the cookie dough.
  6. Drop spoonfuls of the dough onto the prepared baking sheet and gently press each cookie down slightly.
  7. Bake for 12-15 minutes, until the edges are golden brown.
  8. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.
