Cooking Steps
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Wash and peel the sweet potatoes, then slice them into ¼-inch rounds. Place in a single layer on the baking sheet.
- Drizzle with olive oil, sprinkle with salt and pepper, toss to coat, then roast for 20–25 minutes until tender and lightly crisped.
- Top each round with a slice of brie and return to the oven to melt for an additional 5 minutes.
- Remove from the oven and sprinkle with cranberries and pecans, add a garnish of herbs, then serve warm.
