Method
 

Step-by-Step Instructions
  1. Cook the white rice according to package instructions with water and a pinch of salt.
  2. In a skillet, heat olive oil and brown the ground beef or turkey for 5-7 minutes.
  3. Stir in taco seasoning, salt, and pepper, then add water or chicken broth and cook for additional 2-3 minutes.
  4. Add corn and diced tomatoes to the skillet, simmer for 5-7 minutes.
  5. Stir in rinsed black beans and cook for another minute.
  6. Assemble by scooping rice into bowls, topping with meat mixture, lettuce, and cheese. Garnish with cilantro and lime.
