Preheat your oven to 350°F (175°C). Grease and flour two 9x5-inch loaf pans or line them with parchment paper.
In a large bowl, combine the grated zucchini, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Mix well until fully combined.
In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
If desired, fold in the chopped nuts and chocolate chips.
Divide the batter evenly between the two prepared loaf pans.
Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Allow the loaves to cool in the pans for about 10 minutes before transferring them to a wire rack to cool completely.
