Step-by-Step Instructions
  1. In a mixing bowl or a mason jar, add 1 cup of Greek yogurt, ¼ cup of olive oil, the juice and zest of 1 lemon, 4 minced garlic cloves, 2 teaspoons of dried oregano, 1 teaspoon of paprika, and ½ teaspoon each of garlic powder, kosher salt, and black pepper. Whisk or shake vigorously until smooth.
  2. Place 2 pounds of your choice of chicken into a large zip-top plastic bag or shallow dish, ensuring even arrangement.
  3. Pour the prepared marinade over the chicken, ensuring generous coating, then seal the bag tightly or cover the dish.
  4. Refrigerate for at least 30 minutes, ideally up to 24 hours, to enhance flavor and tenderness.
  5. Preheat your grill or oven to medium-high heat (about 375°F). Remove chicken from marinade and cook for 6-8 minutes per side, until reaching 165°F.
  6. Let the chicken rest for 5-10 minutes, then serve with warm pita bread, Greek salad, or Tzatziki sauce.
