Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a mixing bowl, combine the halved strawberries with honey and a pinch of salt. Spread them evenly on the prepared baking sheet.
Roast the strawberries in the preheated oven for 20-25 minutes, or until they are soft and caramelized. Remove from the oven and let cool slightly.
In a food processor, combine the crumbled feta, cream cheese, Greek yogurt, olive oil, lemon juice, garlic powder, and a pinch of salt and pepper. Blend until smooth and creamy.
Taste the whipped feta and adjust seasoning if necessary.
To serve, spread the whipped feta on a serving platter and top with the roasted strawberries. Garnish with fresh mint leaves if desired.
