Ingredients
  

  • 2 cups cooked chicken shredded or diced
  • 1 cup black beans rinsed and drained
  • 1 cup corn frozen or canned (drained)
  • 1 red bell pepper diced
  • 1 avocado diced
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup red onion finely chopped
  • 1/4 cup fresh cilantro chopped
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup lime juice
  • 1/4 cup olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Method
 

  1. In a large bowl, combine the cooked chicken, black beans, corn, red bell pepper, avocado, cherry tomatoes, red onion, and cilantro.
  2. In a separate small bowl, whisk together the lime juice, olive oil, cumin, chili powder, salt, and pepper until well combined.
  3. Pour the dressing over the salad mixture and toss gently to coat all ingredients evenly.
  4. Add the shredded cheddar cheese on top and give it a light toss.
  5. Serve immediately or refrigerate for 30 minutes to allow the flavors to meld together.
