A simple and delicious recipe for beef and broccoli made in a slow cooker, perfect for a weeknight dinner.

- 1 pound flank steak, sliced thin against the grain
- 2 cups broccoli florets
- 1/2 cup low-sodium soy sauce
- 1/4 cup brown sugar
- 2 tablespoons cornstarch
- 1 tablespoon minced garlic
- 1 tablespoon minced ginger
- 1 tablespoon sesame oil
- 1/4 teaspoon black pepper
- 2 cups cooked white rice (for serving)
Instructions
- In a slow cooker, combine the soy sauce, brown sugar, cornstarch, garlic, ginger, sesame oil, and black pepper. Stir until well mixed.
- Add the sliced flank steak to the slow cooker and toss to coat the meat evenly with the sauce.
- Cover and cook on low for 4-5 hours or on high for 2-3 hours, until the beef is tender.
- About 30 minutes before serving, add the broccoli florets to the slow cooker and stir to combine. Cover and continue cooking until the broccoli is tender.
- Serve the beef and broccoli over cooked white rice.
Notes
- For a spicier version, add red pepper flakes or a dash of sriracha to the sauce.
- Substitute the flank steak with chicken breast or tofu for a different protein option.
