- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)
- 1 cup warm water (about 110°F)
- 1/4 cup olive oil, plus extra for drizzling
- 1 tablespoon honey
- 1/2 teaspoon black pepper
- Coarse sea salt for topping
Instructions
- Preheat your oven to 400°F. Grease a muffin tin with olive oil or line with paper liners.
- In a large mixing bowl, combine the flour, baking powder, salt, garlic powder, and rosemary. Mix well.
- In a separate bowl, whisk together the warm water, olive oil, honey, and black pepper until combined.
- Pour the wet ingredients into the dry ingredients. Stir until just combined; do not overmix. The batter will be thick and slightly sticky.
- Spoon the batter evenly into the prepared muffin tin, filling each cup about 2/3 full. Drizzle a little olive oil on top of each muffin and sprinkle with coarse sea salt.
- Bake for 18-20 minutes or until the tops are golden brown and a toothpick inserted into the center comes out clean.
- Remove from the oven and let cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
Notes
- This recipe makes 12 muffins.
- For a cheesy twist, add 1/2 cup shredded mozzarella or parmesan cheese to the batter before baking.
- For a herb variation, substitute the rosemary with thyme or oregano for a different flavor profile.
