- 2 large boneless, skinless chicken breasts
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 tablespoon olive oil
- 1 cup cherry tomatoes, halved
- 1 cup fresh mozzarella balls, drained
- 1/4 cup fresh basil leaves, chopped
- 1/4 cup balsamic glaze
Instructions
- Preheat your grill to medium-high heat.
- In a small bowl, mix together the salt, black pepper, and garlic powder. Rub this seasoning mixture all over the chicken breasts.
- Drizzle olive oil over the chicken and place it on the grill. Cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F.
- During the last few minutes of grilling, add the halved cherry tomatoes and mozzarella balls to the grill, allowing them to warm slightly.
- Once the chicken is cooked, remove it from the grill and let it rest for 5 minutes. Top each chicken breast with grilled tomatoes, mozzarella, and chopped basil. Drizzle with balsamic glaze before serving.
Notes
- For added flavor, marinate the chicken in olive oil, garlic, and Italian herbs for at least 30 minutes before grilling.
- You can substitute the cherry tomatoes with sun-dried tomatoes for a richer taste, or add a sprinkle of red pepper flakes for a spicy kick.
