  • 1/4 cup fish sauce
  • 1/4 cup brown sugar
  • 2 tablespoons soy sauce
  • 2 tablespoons lime juice
  • 4 cloves garlic, minced

  • 1 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. In a large bowl, whisk together the fish sauce, brown sugar, soy sauce, lime juice, garlic, ginger, black pepper, and red pepper flakes until the sugar is dissolved.
  2. Add the chicken thighs to the marinade, ensuring they are well coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or up to 4 hours for more flavor.
  3. Preheat your grill to medium-high heat.
  4. Remove the chicken from the marinade and let any excess drip off. Discard the marinade.
