- 2 pre-made pizza crusts (12 inches each)
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup lemon juice (freshly squeezed)
- 1 tablespoon lemon zest
- 1/4 cup honey
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup fresh arugula (for topping)
- 1/4 cup pine nuts (toasted, for topping)
Instructions
- Preheat your oven to 450°F (232°C). Place the pizza crusts on baking sheets or pizza stones.
- In a mixing bowl, combine the ricotta cheese, lemon juice, lemon zest, honey, vanilla extract, salt, and black pepper. Mix until smooth and well combined.
- Spread the ricotta mixture evenly over each pizza crust, leaving a small border around the edges.
- Sprinkle the shredded mozzarella and grated Parmesan cheese evenly over the ricotta layer on both pizzas.
- Bake in the preheated oven for 12-15 minutes, or until the cheese is bubbly and the crust is golden brown.
- Remove the pizzas from the oven and let them cool for a couple of minutes.
- Top each pizza with fresh arugula and toasted pine nuts before slicing and serving.
Notes
- For a sweeter twist, drizzle additional honey over the top before serving.
