Ingredients

  • 2 cups cooked white rice
  • 1 pound flank steak, sliced thin against the grain
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup heavy cream
  • 1/2 cup honey BBQ sauce
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. In a large skillet, heat the olive oil over medium-high heat. Add the diced onion and sauté for about 3 minutes until translucent. Add the minced garlic and cook for an additional 1 minute until fragrant.
  2. Season the sliced flank steak with salt, pepper, and smoked paprika. Add the steak to the skillet and cook for about 4-5 minutes, stirring occasionally, until browned and cooked to your desired doneness.
  3. Stir in the corn and cook for another 2 minutes.
  4. Reduce the heat to medium-low and pour in the heavy cream and honey BBQ sauce. Stir well to combine and let it simmer for about 3-4 minutes until the sauce thickens slightly.
  5. Add the cooked rice to the skillet and mix until the rice is well coated with the creamy sauce. Heat through for another 2-3 minutes.
  6. Remove from heat and garnish with chopped green onions before serving.

  • For a spicier kick, add a teaspoon of cayenne pepper or a splash of hot sauce to the sauce mixture.
