A refreshing and flavorful salad combining orzo pasta, ripe peaches, prosciutto, and a sweet and spicy dressing.
Ingredients

- 2 cups orzo pasta
- 2 ripe peaches, diced
- 4 ounces prosciutto, thinly sliced
- 1/4 cup crumbled feta cheese
- 1/4 cup fresh basil, chopped
- 1/4 cup olive oil
- 2 tablespoons hot honey (or regular honey with a pinch of red pepper flakes)
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
Instructions
- Cook the orzo pasta according to package instructions. Drain and rinse under cold water to stop the cooking process. Set aside in a large mixing bowl.
- In a small bowl, whisk together the olive oil, hot honey, balsamic vinegar, salt, and pepper until well combined.
- Add the diced peaches, prosciutto, feta cheese, and chopped basil to the bowl with the orzo.
- Pour the dressing over the orzo salad and gently toss until all ingredients are well coated.
- Let the salad sit for about 10 minutes to allow the flavors to meld. Serve chilled or at room temperature.
Notes
- For added crunch, consider tossing in some toasted walnuts or pecans.
- Substitute the peaches with ripe nectarines or plums for a different flavor profile.
