Description
A refreshing and cool cucumber lemonade perfect for summer days.
Ingredients

- 2 large cucumbers, peeled and chopped
- 1 cup fresh lemon juice (about 4–6 lemons)
- 1 cup granulated sugar
- 4 cups cold water
- Ice cubes
- Fresh mint leaves for garnish (optional)
- Lemon slices for garnish (optional)
Instructions
- In a blender, combine the chopped cucumbers and 1 cup of cold water. Blend until smooth.
- Strain the cucumber puree through a fine mesh sieve into a large pitcher, pressing down to extract as much juice as possible. Discard the solids.
- Add the fresh lemon juice and granulated sugar to the cucumber juice in the pitcher. Stir until the sugar is fully dissolved.
- Pour in the remaining 3 cups of cold water and mix well. Taste and adjust sweetness by adding more sugar if desired.
- Chill the lemonade in the refrigerator for at least 30 minutes before serving.
- Serve over ice cubes and garnish with fresh mint leaves and lemon slices if desired.
Notes
- For a sparkling twist, substitute half of the cold water with sparkling water.
- For a herbal flavor, add a few sprigs of basil or rosemary to the pitcher while chilling.
