Step-by-Step Instructions
  1. Pat the chuck roast dry with paper towels and season generously with salt and black pepper on all sides.
  2. Heat olive oil in a large skillet over medium-high heat, then sear the chuck roast for 2-3 minutes on each side.
  3. In the slow cooker, add a base layer of sliced onions, followed by carrots and gold potatoes.
  4. Sprinkle minced garlic, dried thyme, and bay leaf over the vegetables.
  5. Gently place the seared chuck roast on top of the vegetable mixture.
  6. In a bowl, whisk together beef broth and Worcestershire sauce, then pour around the roast.
  7. Cover and cook on LOW for 8 hours or HIGH for 4-5 hours.
  8. Once complete, remove bay leaf and let the roast rest for 10-15 minutes before slicing.
