  • 2 tbsp Extra-Virgin Olive Oil good quality
  • 2 tbsp Fresh Lemon Juice freshly squeezed
  • 1 tbsp Honey adjust to taste
For the Toppings
  • 1 cup Pomegranate Arils
  • 1/2 cup Shelled Unsalted Pistachios chopped
  • 1/4 cup Fresh Mint Leaves chopped
To Season
  • 1 tsp Salt to taste
  • 1 tsp Pepper to taste

Instructions
  1. In a food processor, combine crumbled feta cheese, softened cream cheese, extra-virgin olive oil, fresh lemon juice, and honey. Pulse until smooth and creamy.
  2. Taste the mixture and adjust seasoning with salt and pepper. Blend briefly.
  3. Transfer the whipped feta mixture to a serving dish, smoothing the top and creating a well in the center.
  4. Arrange the pomegranate arils and chopped pistachios on top, and sprinkle mint leaves.
  5. Drizzle extra-virgin olive oil over the top before serving.
  6. Serve with warm pita, crunchy crackers, or fresh vegetable sticks.
