  • 1 pound Fresh Salmon or canned salmon, drained
  • 1 cup Breadcrumbs or gluten-free breadcrumbs
  • 1 large Egg or 1 tablespoon ground flaxseed mixed with 2.5 tablespoons water for vegan
  • 1/4 cup Chopped Herbs like parsley or dill
  • 1 tablespoon Lemon Juice adjust to taste
  • 1 teaspoon Garlic Powder or minced fresh garlic
  • to taste Salt & Pepper adjust to liking
For the Creamy Avocado Sauce
  • 2 ripe Avocados
  • 1/2 cup Greek Yogurt or coconut yogurt for dairy-free
  • 1 tablespoon Additional Lemon Juice for fresh kick
  • to taste Salt & Pepper adjust to taste

Method
 

Step-by-Step Instructions
  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large bowl, flake fresh salmon into small pieces.
  3. Add breadcrumbs, egg, chopped herbs, lemon juice, garlic powder, salt and pepper, and mix well.
  4. Shape the mixture into balls about 1 inch in diameter and place on the baking sheet.
  5. Bake for 20-25 minutes until golden brown and cooked through.
  6. Blend avocados, Greek yogurt, lemon juice, salt and pepper until smooth to make the sauce.
  7. Serve the baked salmon balls warm with the creamy avocado sauce on the side.
