Ingredients
  

For the Bowl
  • 2 medium Sweet Potatoes can substitute with butternut squash
  • 2 tablespoons Olive Oil can substitute with avocado oil
  • to taste Salt
  • to taste Pepper
  • 2 cups Broccoli Florets can use cauliflower
  • 1 cup Shredded Cabbage can swap with spinach
  • 1 cup Grated Carrots no substitute necessary
  • 1 medium Avocado can replace with hummus
For the Peanut Sauce
  • 1/2 cup Peanut Butter use almond butter if allergic to peanuts
  • 3 tablespoons Soy Sauce tamari is a gluten-free alternative
  • 2 tablespoons Maple Syrup agave syrup can be a substitute
  • 2 tablespoons Lime Juice lemon juice could be used instead
  • 1 teaspoon Sesame Oil substitute with olive oil if necessary
For Garnish
  • 1/4 cup Cilantro can use green onions for garnish
  • 1/4 cup Crushed Peanuts

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Dice sweet potatoes into even cubes, place on the baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 25-30 minutes.
  3. Chop broccoli, shred cabbage, and grate carrots. Combine with diced avocado in a mixing bowl.
  4. In a small bowl, whisk together peanut butter, soy sauce, maple syrup, lime juice, and sesame oil until smooth.
  5. Assemble the bowl by layering mixed veggies, topped with roasted sweet potatoes, and drizzle with peanut sauce.
  6. Garnish with cilantro and crushed peanuts before serving.
