- 2 cups unsweetened almond milk (or any milk of your choice)
- 2 medium apples, peeled, cored, and diced
- 1/2 cup brown sugar (or maple syrup for a healthier option)
- 1/4 cup unsweetened applesauce
- 1 teaspoon ground cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 cup chopped walnuts or pecans (optional)
- 1/4 cup raisins or dried cranberries (optional)
Instructions
- Preheat your oven to 350°F. Grease a 9×13-inch baking dish.
- In a large bowl, combine the rolled oats, almond milk, diced apples, brown sugar, applesauce, cinnamon, nutmeg, salt, and vanilla extract. Mix well until all ingredients are evenly combined.
- If using, fold in the chopped nuts and dried fruit.
- Pour the oatmeal mixture into the prepared baking dish, spreading it evenly.
- Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the oatmeal is set.
- Remove from the oven and let it cool for a few minutes before serving. Cut into squares and enjoy warm.
Notes
- For a creamier texture, add an extra 1/2 cup of milk before baking.
- Try substituting the apples with pears or berries for a different flavor profile.
